Grated unpeeled zucchini for a quick summer salad recipe

Warm zucchini and onion salad

Many of us grow the popular summer squash, zucchini, in our gardens. Its skin is an excellent source of fiber so wash, so don't peel it. It's also low in calories, and rich in vitamins B6 and C and minerals including potassium, magnesium and manganese. 

Because zucchini grows so abundantly, it can be a challenge to use them all up. So, if you're tired of zucchini bread, here's a quick warm salad with just five ingredients.

Ingredients

  • 1 tablespoon extra-virgin olive oil*
  • 1 cup diced onion
  • 2 1/2 cups grated, unpeeled zucchini
  • 1 tablespoon minced fresh basil
  • 1/4 cup fat-free plain Greek yogurt

    *Option not included in nutrition facts.

Directions

  1. Heat oil in skillet over medium-high heat. Add onion. Cook for 2 to 3 minutes.
  2. Add zucchini. Cook for 2 to 3 minutes.
  3. Add basil. Cook for 1 minute.
  4. Add yogurt and mix well for 1 minute. Remove skillet from heat.

Serve warm.
