Beets are members of the goosefoot family along with Swiss chard, quinoa and spinach. The inside of beets can be a rainbow of colors including red, white, pink, dark purple and orange-yellow. Beets can be pickled, cooked or enjoyed raw
Try this delicious citrus beet salad ― it may become a new favorite!
Ingredients
3 medium beets, peeled, ends trimmed and diced
2 Valencia oranges, juice and zest
1 lime, juice and zest
2 tablespoons extra-virgin olive oil
1/8 teaspoon salt (or more, to taste*)
½ cup minced green onions
Directions
1. Place diced beets in a medium bowl.
2. In a small bowl, whisk together juice and zest from oranges and lime. Add oil and salt. Whisk. Pour over diced beets. Toss to combine.
3. Sprinkle green onions over salad and serve.
